Hand-rolled pearl couscous made with whole wheat bulgur
Maftoul is a staple and a traditional Palestinian dish by the same name. Originating from Moroccan couscous, then altered to be made from whole wheat bulgur instead of semolina, maftoul is made in a repetitive process of rolling wheat bulgur with water into tiny pearls. The pearls are steamed over boiling water then sun dried, resulting in a naturally toasted flavor.
This Canaan Fair Trade box is certified USDA Organic, made in women-owned cooperatives in the West Bank. Maftoul has a hearty consistency and can easily absorb flavor, a great ingredient for any season since it can be topped with a comforting stew in the winter, or made into a salad during the summer.
